Please help me with my next hacking challenge (my unit complex)

I have been incognito on cracked.io for a while now and love the hacking and exploit forums. 

As the title suggests I want to hack into my unit complex for a challenge. There are some main areas that interest me; The cameras, the RFID, the fibre to the building and main server used for cameras etc. I talked to the lady who runs it all and saw the room she runs out of. There is a server rack, computer and a RFID fob tool. I'm sure the security would be reasonably low as she is not the most tech savvy. Also for reference, i do have some (limited) knowledge in this field, for example i love a good hack the box and i use kali linux as a main penetration testing os. 

Where would i start? Any areas i should be learning more before completing this?

Love the idea and thought of running a script that way but....I want to be discreet and also access it remotely so im able to learn these new skills.
